If you're looking for a satisfying breakfast that's cruelty-free, look no further. This sandwich is packed with protein as well as flavor.
The past week or two at school this semester, Erika and I were going to Einstein's Bagels just about every day we were on campus. (Just to put you in context, this was the week after the half marathon and I was eating meat at the time!) We both ordered a breakfast sandwich with egg white, bacon, avocado, and tomato on a plain toasted bagel. We both ordered this same sandwich every time we went--it was so delicious.
I was craving this breakfast sandwich this morning, but there isn't an Einstein's restaurant near home and I'm back to being cruelty-free/vegan. I stared at the fridge for several minutes and just decided to throw something together. We didn't have bagels, but we did have a small piece of homemade pretzel bread left. I grabbed the bread, a farm fresh egg, tofu, avocado, and tomato and started cooking. I had no idea what I was doing, but it turned out wonderful!
So this CF breakfast sandwich will satisfy all your cravings, even those tough fast food cravings. It's packed with protein from the tofu and egg, as well as carbs and good fats. It's also incredibly simple and easy to make, so try it the next time you're down for a quick, substantial breakfast.
Note: to make Vegan, omit the egg or substitute in vegan liquid egg.
Ingredients
Pretzel bread or plain bagel
Extra firm Tofu
1 Farm Fresh Egg
Salt and Pepper to taste
Red Pepper Flakes to taste
Tomato, sliced
1/2 Avocado, mashed
Directions
Pop the bread or bagel in the toaster to heat it up. Another option would be to pop it in the microwave if you didn't want the edges crunchy. You just want it warm and soft!
Open the tofu package and drain as much of the liquid as you can. Some people will press the tofu in paper towels to drain even more of the liquid, but I don't think it's a big deal. Slice the tofu in thin strips, making 2 large squares--about 2" on each side. I buy the mini packs of tofu, so it's super simple to slice squares.
Spray a small pan with non-stick spray and let the tofu sit on medium-high heat, flipping until each side is nice and brown. The browner it is, the less it tastes like sponge, in my opinion.
Spray a mini pan with non-stick spray and crack the egg. Cook on medium heat until the white is well done and solid. You could scramble the egg if you want, but I think it's simpler to just fry it up. Add salt, pepper, and red pepper flakes to taste.
Slice up a tomato and mash up half an avocado. Then you're ready to build!
I built my sandwich from the bottom up in this order: bottom slice of pretzel bread or bagel, tofu slices, egg, tomato slice, then mashed avocado on the top slice of bread.
The sandwich is really tall and packed full of flavor, so be prepared for a messy plate! There aren't words that describe how tasty this sandwich was for breakfast this morning, and I'm so happy it satisfied my fast food meat cravings!
